We start with whole USDA Prime boneless rib primals, then dry age for 36 days.

The result is a super flavor concentrated piece of meat that is amazingly tender and just right for those special occasions - like anniversary, birthday, or the (hoped for) end of "stay home" orders in 2020.  

While we may have some unsold inventory aging, most is on demand and generally will 36-42 days until delivery of you custom aged meats. The price is per pound and we will cut steaks to the thickness you prefer - as in 1.5 in, 2in etc.  You take 'em & cook 'em or we can cook before you arrive and deliver hot
